PROCEDURES FOR
OPERATING SPORTS
KITCHEN
Thank you for your time in following these instructions for the running of the Door, 50/50 and Sports Kitchen. It is important that everyone work when assigned to. The revenue raised helps defray the cost of the sports program for our children.
IF YOU ARE SCHEDULED TO WORK THE DOOR OR THE KITCHEN, PLEASE ARRIVE ONE-HALF HOUR BEFORE THE START OF THE GAME. ARRIVE AT LEAST 45 MINUTES BEFORE THE FIRST GAME
KITCHEN PERSON
The start up money in the cash box for the first game will be as follows. You will need to separate the money and give it to the people handling the door and the 50/50.
You will have $100.00 to start
v $60.00 for the kitchen small bills
v $20.00 for the door small bills
v $20.00 for the 50/50 small bills
KITCHEN
§ Make coffee and set up hot water for tea and hot chocolate. There is a new drip coffee pot in the cabinet to the left of the refrigerator. Use this coffee pot instead of the large ones.
§ Candy and chips are kept in the bottom cabinet to the right of the selling window. Set everything out on the counter. Clip the chips in the clip stand.
§ Pretzels can be made by placing 4 pretzels in the microwave at a time for 2-3 minutes for defrosting. Spray the pretzel lightly with water from the water bottle and place the pretzel into a plate of salt. Put the pretzels in the oven for 10-15 minutes and then hang on the pretzel hangers.
How to Make
Frozen Pretzels
The person opening the kitchen should have the oven on already: 400 degrees.
This temperature is fine for the pretzels and for re-heating the pizza, or a bagel.
The pretzel machine should be on the serving counter already. The plug is on the gym side of the serving counter {it’s a little short so put the machine right up against the serving window on the left hand side.}
Four (4) pretzels at a time can be put on one of the plastic serving trays and put in the microwave for defrosting. Usually, 2, or 3 minutes is good for defrosting them and heating them up a little. I found that the best was to salt the pretzels after they’re removed from the microwave is to;
Ø Get a paper plate and fill it with salt.
Ø Spray the pretzel lightly with water from the spray bottle.
Ø Press the pretzel into the salt on both sides.
Ø I like to put the finished product on a metal tray {kept on top of the oven} and put them into the oven for about 10 or 15 minutes and then
Ø When you’re done, bring the pretzels to the machine and hang them on the hangers.
§ Soda, Gatorade and water are kept in the left side of the refrigerator. All the condiments are in the refrigerator also.
§ Pizza can be ordered from Esposito’s. The number is hung above the selling window for reference. They will deliver. YOU MUST TELL THEM THE PIZZAS ARE FOR THE SCS SPORTS KITCHEN. The cost is $7 per pie. Use your judgment. On a full day of games, you may want to order 3-4 pies at a time. Keep the pies warm in the oven before being served. If you are the only night game, you may only want to order 2 pies. Pay the pies from the cash box. Tip the delivery person $3.00 for the delivery of 3 pies. Make sure you get a receipt and put it in the bottom of the cash box.

DOOR PERSON
You must be at the door at all times. Never leave the cash box unattended. The entrance fee sign should be prominently displayed. The name of any family who purchase a family pass should be highlighted on the family list sheet which is kept in the box. Grandparents’ names should be listed in the pad in the box. If you are the last game, return cash box to the kitchen and put all the cash in the envelope marked DOOR.

50/50 PERSON
Tickets are kept under the cabinet by the selling window. You may sell at the door and during the game. The calling of the winner is done in between the 3rd and 4th quarters. Remember to take the $20.00 start up money out before dividing the winnings. The winner receives exactly half the collected money. The remaining money is placed in the envelope marked 50/50 and put in the cash box.
50/50 are sold:
v 1 for $ 1.00
v 3 for $2.00
v 15 for $5.00
IF YOU ARE THE LAST GAME:
§ Put all food away to locations where referenced above.
§ Put all condiments neatly back on left side of refrigerator.
§ Clean all pots, trays, etc and put back where you found them.
§ Wipe down the table, counters, microwave, stove and sink.
§ Collect the envelopes from the 50/50 and Door and put them in the Kitchen Cash Box.
Mark Raum or someone he assigns will be there drop off the box before the first game or to collect the box at the end of the last game.

Reminders:
1. No children should be hanging out in the kitchen for safety purposes
2. Coaches should not hold team meetings in the kitchen
3. Parents should relieve the previous games parents in the 4th quarter.
4. Keep start up money in small bills in the appropriate “startup” envelopes for the next game
5. Remove pizza from the boxes before warming them up in oven. For weekend games, order 3 pies at a time for the first game. Order pies as needed following the previous directions. Do not order pies after the start of the last game.
6. Use specific envelopes to cash out. (Envelopes will be labeled with the appropriate team i.e. 5/6 girls 8 boys etc) Use the appropriate envelope to cash out your child’s game. Money totals written on the outside should match money inside envelope. Put pizza receipts in cash box
7. Parents who work the first game need to arrive no later than 45 minutes prior to the start of the first game. The opposing team will arrive 30 minutes before the first game and we need to have the door/50/50 and kitchen ready to go.
8. Parents who work the last game need to breakdown the gym, mop, sweep and clean up kitchen.
9. When working the kitchen, if you have a few spare moments, take inventory and let me know if we are short any food, drink or paper products.
