This is a baseball video, but it can happen in softball. What is the correct call if it would happen in your softball game.

Since there is no "unintentional interference" in softball anymore, the batter would be out for interference and all runners returned to their bases at the time of the pitch. Years ago, we could say unintentional and return the batter to the box and runners to their bases.

Per the Rules Supplement in ASA #24 Hitting the ball a second time.
C -3
If a batter swings at and misses the pitched ball but hits the ball after it bounces off the catcher mitt/glove, the Ball is dead. and all runners must return to the base they occupied prior to the pitch.
If the pitch happens to be strike 3, The batter is out
